Destined to be an engineer like his father, Italian-born Chef Enrico De Martino’s career took an unexpected turn at a young age when his passion for food blossomed while hand-rolling fresh pasta and making gnocchi every Sunday in his grandmother’s kitchen. Combined with his dream to travel the world, Chef Enrico has spent nearly 2 decades embracing food cultures from across Italy, France, Switzerland and Turkey including time spent in Michelin awarded restaurants.
Trained under many star chefs, Chef Enrico has been influenced by strict standards regarding quality and consistency in food preparation. After innumerous highly recognised awards, Enrico stated his most important achievements are when his team exceeds guest’s expectations.
Enrico has cultivated a passion for learning the intricate recipes in each kitchen he steps into. Always returning to his roots though, Chef Enrico is enthusiastic to introduce authentic Italian ingredients and recipes to his menu using the latest trends, modern techniques and superb creativity.
Chef Enrico now leads the culinary team at R&J Italian Lounge & Restaurant, located at The Reverie Saigon, rated as one of the best Italian restaurants in South East Asia. The menu dabbles in regional favourites from north to south – from Wagyu osso buco to home-made pasta crafted with imported Italian flour. R&J exudes a distinctively exuberant flair, with walls of vibrant Italian mosaics, elaborate candelabras and a collection of differently styled dining chairs – giving guests a truly unique and authentic Italian experience.
